I have said over and over again that I’m not the best at ‘making salads.’ Enter the caprese salad. It’s the perfect summer salad, capitalizing on fresh staples and so incredibly easy to make.
It’s simple enough to make at home. Simply slice your favorite tomatoes (I like cherry tomatoes for their crunch!) tear up a ball of fresh mozzarella and toss in some basil leaves. If you like, you can of course tear or chop up the basil for smaller bites. I like to drizzle with some olive oil, balsamic and add a couple of cranks of salt and pepper. Voilá!
Because we are still at home and I am really missing eating out at restaurants, I have been using our ‘fancy’ trays and platters. This is the AnnieGlass Edgey platter I registered for from Zola for our wedding. Any platter – even a simple white one would be fun to jazz up dinnertime and make mealtime feel a little more special.
