One day while lying poolside on our honeymoon, I discovered the Lobster Grilled Cheese at the Andaz Resort Wailea. I truly don’t recall being so obsessed with a sandwich on a vacation, or really in my life, ever.
I proceeded to order this amazing grilled cheese three total times, which doesn’t include my husband’s orders. When you love something and you’re on vacation, you have to indulge, right? I found an easy recipe to recreate this deliciousness at home from Food & Wine. You will notice green flecks from herbs in this lobster – I would use a bit of finely chopped basil to add some depth to the sandwich!
Lobster Grilled Cheese from Food & Wine
Makes 1 sandwich
Heat a heavy-bottomed frying pan to medium. Brush the outside of the bread with mayonnaise. Layer two slices of cheese, lobster meat and the remaining 2 slices of cheese for the sandwich. Season with salt. Slowly grill until the cheese is dripping out of the sandwich and the bread is golden brown.
